Biodynamic Wine Dinner ~ Natural Food + Natural Wines

Join us for a four-course dinner with wine pairings from Meinklang in Austria, producer of the most beautiful certified biodynamic, organic, sustainable and vegan wines. Wine flight includes Pinot Gris and Zweigelt from the wild, untamed Graupert Vineyard.

The Wines:

Meinklang H16, Austria

Floral, smoky, thyme, nutmeg and lemongrass! Wild and green, silky and smooth with a honeyed mouthfeel. Smooth, tart acidity and bright minerality. 100% Hárslevelü with two days of skin contact and no so2.

Meinklang Graupert Pinot Gris

Citrus blossom, mineral, pink grapefruit, and bitter lemon. Spicy and floral, aromatic, luxurious and complex. Gorgeous rosy color. Ten days of skin contact and no so2.

Meinklang Pinot Noir, Austria

Juicy raspberry, cherry, plum and violet. Blackberry jam, roses, musk, frankincense and dark chocolate. Light, velvety and dry with lively acidity.

Meinklang Graupert Zweigelt

Figs, juniper, ancho chile, and musk; deep, strong, woodsy, and juicy. Balanced, smooth and dry. Incredible mouthfeel.

And The Food:

Natural Wine is wine produced with minimal intervention. Nothing is added, and nothing is taken away. Organic, biodynamic, or sustainably produced; un-fined, unfiltered, native yeasts only, no additives and little to no sulfites. Natural wine is a true expression of the grape varietal and of the terroir, the surrounding soil and flora.

Biodynamics is an ecological and ethical approach to farming which works in rhythm with nature. A biodynamic vineyard is a self-sustaining ecosystem; a living organism that brings plants and animals together in a fertile and biologically diverse environment, resulting in products with higher nutrition and excellent flavor. Biodynamic wines are some of the most intense and expressive wines available.

Golden Cluster Savignin Rose

Aromatic and velvety, exotic fruit and hazelnut, spices and flowers. Heady and mysterious, deep and still delicate. A hint of honey balanced by gorgeous acidity. Super awesome and super rare!

Ju De Vie, Rhone

Plum and black cherry, green herbs and spice with a long finish. Dark fruit and grippy tannins. Organic, biodynamic, sustainable and vegan.

Floral, peachy, nectarine, honeysuckle, lemon zest, tangerine. Vibrant and lively. Bergomot and sweet cream. Organic, biodynamic, sustainable, and vegan.

Populis Wabi Sabi, Mendocino California

Blackberry, tobacco, green herbs and spice, fresh cherry. Old vines. Organic and very limited production.

Amorro Tinto Tempranillo, Spain

Roasted meat, leather, baked figs and cherries; strong, fleshy, earthy, thick, spicy. Organic, vegan, no sulfites.

Electrico, Pedro Ximenez Fino, Spain

Figs, nuts, sage, sesame, dry air and smoke. Fresh, spicy, salty, and rich. Naturally produced and incredibly balanced.

Cornelissen’s Susucaru, Sicily, Italy

Juicy and mineral, strawberry, cherry and wild herbs:

Frank Cornellissen’s dark pink masterpiece, grown on the side of the Sicilian volcano, Mount Etna! Hand harvested, vegan, and fermented spontaneously. Says Frank regarding his minimalist winemaking practices:

“Our farming philosophy is based on our acceptance of the fact that man will never be able to understand nature’s full complexity and interactions. We therefore choose to concentrate on observing and learning the movements of Mother Earth in her various energetic and cosmic passages and prefer to follow her indications as to what to do, instead of deciding and imposing ourselves.”
